Fire Roasted Tomato Red Pepper Soup

This is an updated and vegan version of the traditional quick and easy before embarking on an evening of Halloween Trick or Treat Tomato Soup and Grilled Cheese sandwich dinner.
Fire Roasted Tomato & Red Pepper Soup with Sweet Potato Stuffed Wontons is equally simple to make up and serve. The soup recipe calls for:
fire roasted tomatoes | roasted red pepper | lentils | garlic | bay leaf | thyme | white cooking wine | soy milk

1 can of fire roasted tomatoes
¼ cup roasted red peppers, from jar
½ cup lentils, rinsed
1 cup water
2 garlic cloves, diced or sliced
1 bay leaf
1 tablespoon thyme
½ cup white cooking wine
 ¼ to ½ cup soy milk
Add rinsed lentils, water, garlic, bay leaf and thyme to soup pot. Bring to boil, reduce heat and simmer until lentils are softened. Add can of fire roasted tomatoes and roasted red pepper to pot. Continue to simmer 10 minutes. 
Remove from heat. Add soy milk. Using an immersion blender, puree soup. Serve. In the above photo, soup is served with fried wontons stuffed with mashed sweet potato. 
Depending on the size of your family, this recipe can be doubled.
